This Spinach and Artichoke Pasta dish is a great quick fix for any weeknight dinner! It takes less than 30 minutes to make, and tastes like it came straight from a small café in Italy.
Ingredients:
1 box (12 oz.) of Penne pasta
½ box (4 oz.) of frozen Spinach, thawed and drained
1 can quartered Artichoke Hearts, drained and chopped
½ cup light Olive Oil
2 tablespoons Chicken Stock
2 tablespoons garlic, minced
¼ teaspoon red pepper flakes
½ teaspoon Basil
1 teaspoon Oregano
Handful Parmesan Cheese, grated
Handful Bread Crumbs
Pinch salt and pepper
Cooking Directions:
Cook pasta as directed on box. Heat Olive Oil and garlic in a large skillet for 2 minutes or until garlic is transparent and you can smell the garlic. Add thawed Spinach and Artichoke hearts, and cook for another 5 minutes. Add chicken stock, red pepper flakes, Basil and Oregano. Let simmer on low for another 5-10 minutes. When pasta is cooked and drained, add sauce, Parmesan cheese and breadcrumbs. Serves 4-6 hungry Italians!
