Peanut Butter & Chocolate Chip Banana Bread

Who doesn’t love Banana Bread? As a child, I have fond memories of coming home from school and being surprised with a slice of my mother’s famous banana bread. As an adult, I’m surprising myself with just how easy and affordable banana bread is to make—especially because you can recycle those older bananas that no one wants to eat.

But what about peanut butter and chocolate, the ultimate match made in heaven? In today’s recipe, I’m combining all three of my favorite sweet tastes for the perfect treat: Peanut Butter & Chocolate Chip Banana Bread.

 

Ingredients:

 

2 cups all purpose flour

¾ tsp baking soda

½ tsp salt

3 medium bananas

½ cup granulated sugar

1/3 cup buttermilk

½ cup creamy peanut butter

2 eggs

2 tsp vanilla extract

1 cup semi-sweet chocolate chips

 

 

Directions:

 

Combine together flour, baking soda and salt. In a separate bowl, mash the bananas and mix with the sugar, peanut butter, eggs, buttermilk and vanilla extract. Slowly combine the wet and dry ingredients into one bowl, and stir together until you have a smooth batter. Add in your chocolate chips.

 

Pour batter into a greased loaf pan or baking dish, and bake at 350 degrees for about 1 hour, or until the top is browned. To check if your banana bread is done, insert a toothpick or tip of a knife into the center of the bread. If the toothpick comes out with only a few crumbs, it is ready.
