Creamy Broccoli Pesto

It’s yet another Monday, and we’re kicking off the week with this quick, healthy and meatless meal that your whole family will love. Monday is the perfect day to make pasta night, because you’re too busy to spend a lot of time cooking in the kitchen, but everyone could also use the extra energy for the week ahead. Regular Bolognaise sauce is heavy with read meat, while Alfredo sauce can slow you down with cream and cheese. This creamy broccoli pesto is decadent like a cream sauce, light and meatless for a healthy start, and an easy way to sneak vegetables into dinner.

Ingredients:

 

1 lb spaghetti, or any other pasta of your choice

2 large handfuls of fresh basil

2 cups cooked broccoli

1 clove garlic

½ cup pie nuts

½ cup parmesan cheese

1 cup olive oil

salt and pepper to taste

 

Directions:

 

First, cook the pasta as directed on the box. To prepare the sauce, simply pulse basil, broccoli, garlic, pie nuts and Parmesan cheese in a food processor, while slowly adding in all of your olive oil by drizzling it into the top of the food processor. Combine the ingredients in the food processor until you reach a smooth, saucy consistency. Add in your salt and pepper, combine with pasta and serve!
