Keeping a vegetarian diet can be difficult—especially when it comes to burgers! But incorporating vegetarian foods into your weekly meals can be easy. Today’s recipe will help you continue Meatless Monday and give you a healthier way to start the week. I’m trading fat-filled beef burgers for a more meatless version. My Black Bean Sliders are so delicious, you won’t even miss the meat!
Ingredients:
1 can of black beans, drained and rinsed
1 cup quinoa, cooked
½ onion, diced
1 clove garlic, diced
1 tsp Worcestershire sauce
½ tsp cumin
½ tsp chili powder
2 sprigs parsley, chopped
1 egg
1 tbsp olive oil
Directions:
In a saucepan on medium heat, sauté olive oil, onion and garlic until soft. Next, place your sautéed onion and garlic in a blender or food processor. Add black beans, cooked quinoa, Worcestershire sauce, cumin, chili powder, parsley and egg. Blend for 2 minutes, or until mixture is blended and still slightly coarse.
Heat olive oil in a pan on medium-high heat. One by one, spoon out the mixture onto the pan. Gently flatten each spoonful with the back of your spoon. Cook each burger for three minutes on each side, or until there is a golden brown crust on each side. Serve your sliders on small toasted buns, with shredded white cheddar cheese and avocado.
